Ratatouille




This is a very popular recipe Provence in France. It is a dish that can be made with all kinds of vegetables. Almost always leads tomato, eggplant, zucchini, peppers, onions and garlic. So that we understand, here in Spain is similar to a ratatouille or fry. RATATOUILLE
Ingredients for 6 people

2 chopped onions 3

garlic cloves

1 red pepper

2 green peppers

2 eggplants 2 zucchini

400 gr. tomatoes, peeled and chopped

1 dl. oil ½ olive

A little sugar to keep the acidity of tomato

mix 1 teaspoon herbes de Provence (thyme, basil, marjoram, oregano)



Salt Preparation In a large skillet with olive oil, lightly fry the onions, peeled and chopped, when carrying 5 minutes add the zucchini, peppers and eggplant. It leaves about 10 minutes over low heat and add the chopped tomato, salt, sugar and herbs de Provence. Simmer all together over low heat to evaporate water from the tomato vegetation. Serve hot, warm or cold. You can splash chopped fresh basil and add some sites, when serving, black olives. May well serve a starter or lining bird, blue fish, meat and become a totally unique dish
