PEAS STEWS
Ingredients for 6 persons:
½ shelling peas
3 cloves garlic
1 tablespoon tomato paste
1 dl. white wine
1 bay leaf
1 dl. olive oil
A little background or chicken broth or vegetable
Salt and pepper
A sugar pelllizco
Preparation: Peel the onion and chop. Peel carrots and cut into slices. Peel the potatoes and dice. In a pan put oil, then garlic cloves, peeled and rolled or chopped, so as desired. Add potatoes, carrots, onions, peas, bay leaf, tomato paste, wine, and the fund or stock, salt and pepper and a pinch of sugar. Cover the pan and cook over low heat until vegetables are tender. Remove from heat, remove bay leaf and serve hot.
fresh peas have a very short season, but if we have them we must not forget and take the few occasions when we buy them.
